Surf & Turf
Ingredients
- Rib eye steak
- Redfish on the half shell
- 1 Tablespoon of Uncle Monkey's
- Half of a lemon
- 1 Tablespoon of butter
Directions
- Season both sides of ribeye and allow 20 min to marinate at room temperature.
- Squeeze lemon on the meat side of the redfish then pour on the melted butter.
- Season the redfish with Uncle Monkey's and rub it in.
- Place everything on the grill at medium to high heat (redfish will cook scale side down the entire time)
- Remove the redfish when the meat is white throughout and still moist.
- Cook steak as desired.

Bacon-wrapped Backstrap
Ingredients
- Deer backstrap (cut into ½" slices)
- Bacon
- Fresh jalapeños
- 1 Tablespoon Uncle Monkey's
- Toothpicks
- Raspberry chipotle sauce
Directions
- Season meat and let it sit at room temperature for 20 minutes.
- Cut the stems off jalapeños and cut them in half (longways) to make two boats.
- Scoop seeds out of jalapeños.
- Place one slice of meat on one half of the jalapeño, wrap with bacon and stick a toothpick all the way through.
- Place on a hot grill and flip them until the bacon is fully cooked.
- A few minutes before they are done, brush on the raspberry chipotle sauce and cook until glazed.

Cracker-fried Wild Turkey
Ingredients
- 1 Sleeve of Saltine crackers
- 1lb Thin-sliced turkey breast
- 1 Tablespoon of Uncle Monkey's
- ½ Gallon peanut oil
Directions
- Season turkey slices with Uncle Monkey's.
- Crumble up crackers into small crumbs.
- Roll turkey slices in cracker crumbs until covered.
- Heat oil to 325 degrees.
- Fry to a golden brown.

Chicken Wings
Ingredients
- Package of whole chicken wings (remove the wing from the drumlett)
- Uncle Monkey's
- Franks wing sauce or sauce of choice
Directions
- Season both halves of the wings with Uncle Monkey's.
- Cook over medium high heat until golden brown.
- A few minutes before done, brush on wing sauce.

Grilled Quail & Pork Riblets
Ingredients
- Wild or farm-raised quail
- Package of pork riblets
- Uncle Monkey's
Directions
- Season both sides of quail with Uncle Monkey's.
- Season both sides of riblets with Uncle Monkey's.
- Grill over medium high heat turning until golden brown or fully cooked.
- You may want to wrap the quail in foil for the last 5 min to help keep them moist.
