Surf & Turf
Ingredients
  1. Rib eye steak
  2. Redfish on the half shell
  3. 1 Tablespoon of Uncle Monkey's
  4. Half of a lemon
  5. 1 Tablespoon of butter
Directions
  1. Season both sides of ribeye and allow 20 min to marinate at room temperature.
  2. Squeeze lemon on the meat side of the redfish then pour on the melted butter.
  3. Season the redfish with Uncle Monkey's and rub it in.
  4. Place everything on the grill at medium to high heat (redfish will cook scale side down the entire time)
  5. Remove the redfish when the meat is white throughout and still moist.
  6. Cook steak as desired.

Bacon-wrapped Backstrap
Bacon-wrapped Backstrap
Ingredients
  1. Deer backstrap (cut into ½" slices)
  2. Bacon
  3. Fresh jalapeños
  4. 1 Tablespoon Uncle Monkey's
  5. Toothpicks
  6. Raspberry chipotle sauce
Directions
  1. Season meat and let it sit at room temperature for 20 minutes.
  2. Cut the stems off jalapeños and cut them in half (longways) to make two boats.
  3. Scoop seeds out of jalapeños.
  4. Place one slice of meat on one half of the jalapeño, wrap with bacon and stick a toothpick all the way through.
  5. Place on a hot grill and flip them until the bacon is fully cooked.
  6. A few minutes before they are done, brush on the raspberry chipotle sauce and cook until glazed.

Cracker-fried Wild Turkey
Cracker-fried Wild Turkey
Ingredients
  1. 1 Sleeve of Saltine crackers
  2. 1lb Thin-sliced turkey breast
  3. 1 Tablespoon of Uncle Monkey's
  4. ½ Gallon peanut oil
Directions
  1. Season turkey slices with Uncle Monkey's.
  2. Crumble up crackers into small crumbs.
  3. Roll turkey slices in cracker crumbs until covered.
  4. Heat oil to 325 degrees.
  5. Fry to a golden brown.

Chicken Wings
Chicken Wings
Ingredients
  1. Package of whole chicken wings (remove the wing from the drumlett)
  2. Uncle Monkey's
  3. Franks wing sauce or sauce of choice
Directions
  1. Season both halves of the wings with Uncle Monkey's.
  2. Cook over medium high heat until golden brown.
  3. A few minutes before done, brush on wing sauce.

Grilled Quail and Pork Riblets
Grilled Quail & Pork Riblets
Ingredients
  1. Wild or farm-raised quail
  2. Package of pork riblets
  3. Uncle Monkey's
Directions
  1. Season both sides of quail with Uncle Monkey's.
  2. Season both sides of riblets with Uncle Monkey's.
  3. Grill over medium high heat turning until golden brown or fully cooked.
  4. You may want to wrap the quail in foil for the last 5 min to help keep them moist.
